  • ½ cup quinoa
  • ⅛ seedless watermelon, cut into small cubes
  • ½ cucumber, cubed and diced
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons lime juice
  • 2 tablespoons hemp seeds
  • 1½ tablespoons mint leaves
  • ⅛ teaspoon sea salt

Step 1

Cook the quinoa according to package directions.

Step 2

When the quinoa is cooked, let it cool.

Step 3

In a large mixing bowl, combine the watermelon, cucumber, red onion, lime juice, mint, and salt.

Step 4

Stir in the cooked quinoa and season with additional salt or lime juice, if necessary.

Step 5

Chill and garnish with hemp seeds before serving. Enjoy!


Refrigerate leftovers in an airtight container for up to 2 days.

Add a drizzle of extra-virgin olive oil for more healthy fat.

You can substitute basil or parsley for mint.
