• 1 whole seedless watermelon, cubed
  • ½ pound halal feta cheese, cubed
  • ½ cup balsamic vinegar
  • ⅓ cup pure cane sugar
  • fresh mint, chopped
  • cracked black pepper
  • extra virgin olive oil

Step 1

Prepare balsamic reduction. Heat small sauce pan over medium heat; add balsamic vinegar and sugar. Bring mixture to a quick boil, then reduce flame to low and simmer for 8 minutes. Cool and refrigerate before serving.

Step 2

Plate watermelon and feta. Garnish with mint and add cracked black pepper. Drizzle with extra virgin olive oil.

Step 3

Drizzle with balsamic reduction and serve immediately.
