Ingredients

  • 3 pounds ube or purple sweet potatoes (about 4)
  • ½ cup unsalted butter or coconut oil
  • ½ cup coconut sugar or stevia
  • 1 teaspoon salt
  • 2 teaspoons vanilla flavoring

Step 1

Preheat the oven to 400°F.

Step 2

Wrap each individual ube with foil. Bake for about 1 hour or until soft.

Step 3

Remove ube from foil and let them rest until they are cool enough to handle.

Step 4

Peel and discard the ube skins.

Step 5

In a mixing bowl, combine ube with butter or coconut oil, coconut sugar or stevia, salt, and vanilla flavoring. You may use a food processor to purée ube to the desired smoothness.

Step 6

Transfer the ube mixture to a 2-quart casserole dish or 7" x 11" Pyrex® baking dish.

Step 7

Sprinkle coconut sugar over the top of the dish.

Step 8

Bake immediately or cover with Saran™ wrap and refrigerate overnight. If refrigerating, be sure to remove from the refrigerator an hour before baking to allow the casserole to heat to room temperature.

Step 9

Heat the oven to 350°F.

Step 10

Cover the top of the casserole with foil and bake for about 30 to 45 minutes.

Step 11

Remove foil, turn on the broiler, and broil the top of the casserole for about 2 to 5 minutes until the sugar begins to caramelize.

Step 12

Remove the casserole from the oven and serve immediately.

Note:

This dish is served well as a tasty side for any roasted protein entrée. Try it with fish or your choice of protein.
