• 2 cups red lentils
  • 9-10 cups water
  • 1 teaspoon cumin
  • ½ teaspoon turmeric
  • 1 tablespoon salt
  • ½ teaspoon pepper
  • 1 large onion, diced
  • 2 tablespoons olive oil
  • juice of one lemon

Step 1

Rinse lentils well. Add to a large pot with the water. Bring to a boil, then cover pot and reduce heat slightly. Cook for 30 minutes, stirring occasionally, or until lentils are tender.

Step 2

While the lentils are cooking, heat a sauté pan over medium heat. Once hot, add olive oil. Sauté the onions until golden brown.

Step 3

When the lentils are tender, add cumin, turmeric, salt, pepper, and sautéed onions.

Step 4

Simmer for 5 to 10 minutes. Turn off heat and stir in lemon juice.

Step 5

Serve with lemon wedges. Enjoy!
