• 2 pounds russet potatoes, peeled
  • oregano, crushed
  • salt
  • olive oil
  • juice of 2 lemons
  • water
  • additional olive oil for drizzling

Step 1

Pre-heat oven to 400°F.

Step 2

Peel and cut the potatoes into long wedges.

Step 3

In an oven-safe baking dish, arrange the potato wedges and season with salt and oregano.

Step 4

Drizzle with olive oil and add the lemon juice.

Step 5

Pour enough water to cover the potatoes.

Step 6

Bake until the water has been absorbed and/or evaporated.

Step 7

Drizzle additional olive oil over the top of the potatoes and return to the oven to brown.
