Chilled Peach Soup

Place sugar, mint leaves, cinnamon, and half-and-half in a bowl. Stir until the sugar has dissolved and the mixture is fully combined.
Add sliced peaches and transfer to a saucepan.
Cook over medium heat for 15 minutes, stirring frequently. If necessary, lower the heat to prevent scorching the cream.

Allow to cool, then transfer to a blender or food processor and blend until completely smooth.
Cover and refrigerate until ready to serve.
Serve chilled.
