Ingredients

  • 1 cup plain Greek yogurt
  • 2 teaspoons chia seeds
  • 1 cup mixed berries
  • 2 tablespoons coconut flakes
  • 2 tablespoons hemp seeds
  • 1 tablespoon ground flaxseeds (optional)
  • 2 teaspoons honey
  • 2 small sprigs fresh mint

Step 1

In a small bowl, soak the chia seeds in 3 teaspoons of water for about 10 minutes, until gel-like.

Step 2

Add 1/4 cup of plain Greek yogurt in each glass for the first layer.

Step 3

Spoon half of the chia gel into each glass, for the second layer.

Step 4

Divide half of the coconut flakes, hemp seeds, flaxseeds (if using) and berries between both glasses, for the third layer.

Step 5

Repeat another yogurt layer, chia gel, coconut flakes, hemp seeds, flaxseeds then remaining berries.

Step 6

Finally, drizzle each cup with 1 tsp honey, and garnish with a mint sprig. Serve and enjoy!

Notes:

Refrigerate leftovers in airtight container for up to three days. Use crushed nuts for extra toppings. Use coconut yogurt for a dairy free option.
